Icing and Frosting 101

Just what the heck is icing or frosting???
Basically it is a sweet glaze made of sugar that usually also contains butter, water, sometimes egg whites, milk, or flavorings and is used to cover or decorate baked goods, such as your favourite cookies and cakes.

How is it formed?
Dreaming of pretty sugary flowers or roseettes? We can do it! Icing is formed into shapes such as flowers and leaves using a good old pastry bag. Such decorations commonly grace birthday, communion, baptism, shower and wedding cakes and cupcakes and even cookies. Food coloring is added to the icing mix to achieve just about any desired color. The sky is the limit really – chips, sugars, sprinkles, mists, edible flowers or other decorations are often used on top of icing.

What types of icing are there?
Lets start with the simplest – glacé. This only contains icing sugar and water. It can be flavored and coloured as desired (such as by using lemon juice).
A little more complex – icings can be made richer by beating fat into icing sugar (as in butter cream), by melting fat and sugar together, by using egg whites (as in royal icing), and by adding other ingredients such as glycerin (as in fondant). Some icings can be made from combinations of sugar and cream cheeses, or by using ground almonds (as in marzipan).

How the heck does icing get on there?
Icing can be applied with a utensil such as a knife or spatula, or it can be applied by drizzling or dipping (like a glaze) or by rolling the icing out and draping it over the cake (like marzipan). The method of application largely depends on the type and texture of icing being used.

Uses you say?
Icing may be used to completely or partially cover the outside of a cake or other baked product, and it can also be used between layers in a cake as a filling or it can even be used completely on its own as a stand alone piece (think crazy cake competitions that take days to create masterpieces)!
